Fruit Skewers with Chocolate

Each skewer is threaded with juicy pineapple, sweet strawberries, bananas, and kiwis, then finished with an easy chocolate drizzle that hardens in the fridge. The combination of cold fruit and snappy chocolate makes them so refreshing and fun to eat.

They look beautiful on a platter and come together in minutes. You can prepare them ahead of time and keep them chilled until serving.

Key Ingredients

  • Fruit: I use pineapple, strawberries, bananas, and kiwis, but feel free to use any fruit you love. If you’re making these ahead of time, skip the bananas, as they can brown if left to sit for too long. Grapes, melon, or blueberries make great substitutes.
  • Chocolate and Coconut Oil: These two ingredients create the perfect chocolate drizzle. The coconut oil melts into the chocolate, making it smooth and easy to drizzle, then helps it harden once chilled. Use your favorite chocolate chips (white, dark, milk, or semi-sweet all work beautifully).
  • Skewers: Choose wooden skewers that are at least 8 inches long so there’s enough room for the fruit and space to hold them easily.

How to Make Fruit Skewers

Tip 1: Keep everything cold. Fruit is easiest to work with and skewer when it’s chilled. Cold fruit also helps the chocolate drizzle set quickly.

Tip 2: Dry the fruit before drizzling. After washing and cutting the fruit, pat it completely dry with paper towels. If it’s damp, the chocolate may slide off instead of sticking.

Tip 3: Serve right from the fridge or freezer. These are best cold, especially on warm days. If frozen, let them sit at room temperature for 5 to 10 minutes before serving, allowing the fruit to soften slightly.

You Will Need

1 pound fresh pineapple, cut into ½-inch cubes

1 pint strawberries, hulled and halved

2 bananas, peeled and cut into ½-inch cubes

3 kiwis, peeled and cut into ½-inch cubes

½ cup chocolate chips

4 teaspoons coconut oil

12 bamboo skewers, 8 to 10 inches long

Directions

    1Assemble the skewers: Thread the fruit onto bamboo skewers, alternating varieties. Use about two pieces of each fruit per skewer.

    2Refrigerate the fruit: Arrange the skewers in a single layer on a rimmed baking sheet. Refrigerate while you make the chocolate drizzle.

    3Make a chocolate drizzle: Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15-second bursts, stirring after each, until the chocolate is smooth and fully melted.

    4To finish: Remove the skewers from the refrigerator and drizzle each one with melted chocolate. Return them to the fridge until the chocolate is firm, then serve.
