Beet Juice

This beet juice recipe combines raw beets, lemon, ginger, and cucumber. It’s refreshing, naturally sweet, and tastes fantastic.

We love this beet juice so much that we could drink it every day. Beets are naturally sweet, which pairs perfectly with the fresh lemon and ever-so-slightly spicy ginger. Since we love it in fresh juices, we also add cucumber, which makes this juice exceptionally refreshing and hydrating.

Just as with our green juice recipe, we use our cold-press (masticating) juicer to extract the most out of the vegetables. If you do not have one, a centrifugal juicer works, or you can even make this beet juice using a blender (tips are below).

Key Ingredients

  • Beets: Red or yellow beets work here and come packed with nutrients like folate, manganese, potassium, iron, and vitamin C. When shopping, look for beets with smooth, unblemished skin. Give them a good scrub (no need to peel).
  • Lemon: Fresh lemon cuts through the earthiness of the beets. Plus, the vitamin C in lemons can help your body absorb other nutrients, like iron. Peel your lemons and remove the seeds before juicing.
  • Ginger: We love fresh ginger here and always find it makes us feel good. There’s no need to peel it, just scrub, slice, and add to your juicer. Look for fresh ginger with smooth, unwrinkled skin. We also use ginger in our green juice and these ginger shots.
  • Cucumber: Cucumbers are super hydrating and add a refreshing flavor to the juice. Choose firm, bright-green cucumbers. I love English, Hothouse, or Persian cucumbers since they have thinner skins.

How to Make Beet Juice

Tip 1: Do not peel the beets, ginger, and cucumber. As long as you scrub the beets and ginger really well with a veggie scrubber, there’s no need to peel them (a win in my book!). Cucumber goes into the juicer with the peel, too. I just rinse it well.

Tip 2: Remove the lemon peel. Lemon peel can be overpowering, so we remove it before juicing. Use a vegetable peeler and do your best to leave as much of the white membrane as you can—you’ll find a lot of nutrition there.

Tip 3: Use a cold-press juicer, if possible. We recommend using a cold-press juicer to extract as many nutrients as possible from the veggies (we love our Omega). A centrifugal juicer works, but the heat generated can start to break down nutrients in the fresh juice.

If you only have a centrifugal juicer, you can still make this beet juice recipe. If you only have a blender, you can use it to make this juice (see tip 4).

Tip 4: Use a blender instead. If you do not have a juicer, use a high-speed blender. Add all of the beet juice ingredients to the blender and blend for 1 to 2 minutes. If the ingredients aren’t breaking down, add a splash of water and continue to blend until they do. Strain through a fine-mesh strainer before serving.

Beets are already naturally sweet, so we keep the ingredient list for this beet juice short. If you make it and find it too earthy, push half a cored apple or 1 to 2 carrots through the juicer for some extra sweetness.

You Will Need

2 medium beets, scrubbed clean and tops trimmed

1 medium seedless cucumber (such as hothouse or English)

1 (1-inch) piece fresh ginger, scrubbed

1 medium lemon

½ apple or 2 carrots (optional), for sweetness

Directions

    1Cut the beets, cucumber, and ginger into pieces small enough to fit through your juicer’s feed tube. Remove the yellow peel from the lemon, keeping as much of the white pith as possible. Slice the lemon and remove all seeds. Set half of the lemon aside.

    2Turn on the juicer. Feed the ingredients through, alternating between the beets, cucumber, ginger, and half of the lemon.

    3Stir the juice and taste. For more brightness, juice the remaining half of the lemon. If the flavor is too earthy or tart, juice the optional apple or carrots to balance the flavor.

Adam and Joanne's Tips

  • Fresh vegetable juice is best the day you make it, but you can keep it in the fridge for up to 2 days. Store in glass, airtight containers. If you have used a cold-pressed juicer, it should last a little longer.
  • How to make beet juice without a juicer: Add all the prepared ingredients to a high-powered blender (like a Vitamix) and blend until smooth (adding a splash of water if needed). Then press the pulp through a fine-mesh strainer to separate the juice from the pulp. A juicer will make better juice and produce less waste, but it gets you very close.

    Your beet root juice doesn’t say the amount per vegetable. Is it 3oz of beets 8oz of cukes? What’s the exact amount?

    I made this juice and I love it. I use the whole lemon peel and all I did two large beets. I did a large hunk of ginger and half of a cucumber. It came out delicious. I feel healthier already. Thanks for the recipe. Happy new year y’all. Southern send

    I tried the beet recipe for the first time. I totally enjoyed it. The sweet and sour taste went well together. I also added some spinash to my drink. I automatically luv cook beets so this raw version was delicious to my pallette. Yes!the blender method is time consuming and hard work. I had to strain my pulp twice to only get 4ozs of drink. My hands were tired during that process. I will have to invest in a good economical juicer. Looking forward to trying many more of your other smoothies.

    I just finished juicing this recipe and absolutely love it!! The lemon and ginger cut some of the sweetness from the beets and the cucumber makes the taste a little less intense. Thank you for posting this recipe!

    I absolutely love beetroot and watermelon with ginger…worth a try to sub the melon for cucumber which would make it a lot less sweet but equally refreshing. Ginger is the bees knees for me 🙂
