Homemade Steak Seasoning

You’ll be happy to know that you probably already have everything you need in your spice cabinet to make it. This blend is just the right mix of citrus, toasty, and savory flavors, making beef taste even more amazing. We think you’ll love it as much as we do!

We use this rub on everything from flank steak to ribeye, and it always takes our steaks up a notch. It’s even the base for our favorite steak marinade. I’ve also tried it on both pan-seared and grilled steaks, and it never disappoints.

Key Ingredients

  • Black Peppercorns: I love black pepper and steak! They add a spicy, floral flavor and help to make the steak taste well-seasoned. We toast and grind or crush them before adding to my spice blend, which brings out their flavor even more.
  • Coriander Seeds: Coriander adds a warm, citrusy flavor. We toast the seeds with the peppercorns and grind or crush them before adding them to the mix.
  • Dried Dill: We both love the green of dried dill, and it adds a fresh, herbaceous flavor.
  • Onion powder and Garlic Powder: These classic spices add umami and help to enhance the natural flavors of steak.
  • Italian Herb Seasoning: I use something like McCormick Italian seasoning to add more herbs to the spice blend. Look for something with dried herbs like oregano, basil, thyme, and rosemary.
  • Flaky Sea Salt: I LOVE Maldon sea salt in this steak blend.
  • Cavender’s Greek Seasoning or Generic All-Purpose Seasoning: This adds more flavor and a mix of aromatics. You can leave this out, but I genuinely love the extra flavor. (We also reach for this as a stand-alone seasoning often when cooking at home, so it’s a good addition to your spice cabinet.)
  • Aleppo Pepper or Red Pepper Flakes: These add a mild heat with fruity undertones. I especially love Aleppo pepper.

How to Make Steak Seasoning (and How to Use It)

To make steak seasoning, add all the spices, along with salt and pepper, to a bowl and stir well. Then, store it in a jar or an airtight container for up to 6 months (maybe a bit longer). I keep my jar towards the front of my spice cabinet because I reach for it a lot. Here are a few tips for using it:

Tip 1: Be generous. I’m generous when seasoning steaks. Use a tablespoon of this steak seasoning per pound of steak (I know that sounds like a lot, but trust me). Thanks to all the spices, this doubles as a dry rub. We use this steak rub in our grilled steak recipe.

Tip 2: Use it in marinades. We also use this seasoning blend to make our favorite steak marinade. It’s fantastic. We mix it with extra garlic, lemon juice, soy sauce, and Worcestershire sauce to create an outrageously flavorful marinade.

Tip 3: Use on other meats. This seasoning blend can also be used with other proteins, such as chicken, pork, and turkey, but my current favorite use is with veggies! Honestly, this is my current go-to veggie seasoning.

This homemade steak seasoning recipe is quick to make and has a long shelf life. The combination of coriander, dill, onion powder, garlic powder, and salt brings out the steak’s natural flavors.

Makes 8 tablespoons

You Will Need

1 ½ tablespoons whole black peppercorns

1 ½ tablespoons whole coriander seeds

1 tablespoon dried dill

1 tablespoon onion powder

1 tablespoon garlic powder

2 teaspoons Italian herb blend or Italian seasoning, like McCormick

1 tablespoon plus ½ teaspoon flaky sea salt, like Maldon

1 teaspoon Cavender’s Greek Seasoning or generic all-purpose seasoning like Mrs. Dash

½ teaspoon Aleppo pepper or red pepper flakes

Directions

    1Place the peppercorns and coriander into a skillet over medium heat. Toast just long enough to become fragrant, about 3 minutes. Cool to room temperature.

    2Add toasted peppercorns and coriander to a resealable bag and smash with a rolling pin. Alternatively, use a mortar and pestle or spice grinder if you have one. When they are cracked and smashed, mix them with the remaining spices.

    3Store in an airtight jar, in a cool, dark place, for up to 1 year. When using, we use 1 tablespoon of the seasoning blend for 1 pound of meat.

      Hi Sean, Thank you for your comment. When we say better than store-bought, we mean that this seasoning blend surpasses any pre-packaged steak seasoning you can find in stores. The two blends (or similar) you mentioned are likely already present in most people’s spice cabinets. Our suggestion is to combine a variety of spices for an even more exceptional result.
